Safflower

I found these at the grocery store of all places. I really loved its shape and especially the orange pompom flower on top. They reminded me of thistles, minus the irritating part. Turns out they are of the same family.

Who knew what a safflower even looked like? But this is a lovely painting and I like the shape and little pompom on the end too! So glad I found your blog!

How interesting! Is this an edible plant or is it just used to make safflower oil? (Please forgive both my botanical and culinary ignorance)
